OUR MEDIUM CHEESES

Our medium taste profile includes our cheeses with an intensity that is more pronounced. The slow maturing of these cheeses allows them to have more developed flavours and smells. They are the perfect addition to a cheese platter to balance out the flavours. Their taste is flavourful without being too strong. They are slightly pronounced but accessible to all. Medium cheeses can easily be identified thanks to their aroma of dried fruits and nuts.

Medium, Crumbly, and Subtle
Our medium, crumbly and subtle profile describes an aged pressed cheese. The aging process allows the smells of fresh cut grass and white flowers to fully blend with the taste of butter and hazelnut.

Medium, Supple, and Nutty
The medium, supple and nutty profile includes cheeses with a distinctive taste of hazelnut and fruits with seeds. Their taste varies from semi-mild to semi-strong and their texture is supple. These cheeses are traditionally heated, in order to release their full taste range.

Cantonnier is a firm cheese, uncooked and surface ripened with a washed rind. It distinguishes itself with its effervescent flavour, reminiscent of fruity cream and fresh apples.
