A triple cream soft surface ripened cheese with a soft body and creamy, smooth texture. Its bloomy rind has subtle nutty and earthy flavours as well as a hint of salt, with the taste changing slightly depending on the age of the cheese.
Ingredients
For the waffles
- 2 cups all-purpose flour
- ¼ cup sugar
- 2 eggs
- 2 tsp baking powder
- ¼ tsp salt
- 1 ½ cup milk
- ¾ cup butter, melted
For serving
- 1 Alexis de Portneuf Belle Crème cheese (125g), sliced
- Raspberries, to taste
- Raspberry jam, store bought
Directions
- Preheat waffle iron according to the manufacturer’s instructions.
- In a large bowl, combine flour, sugar, baking powder and salt. Set aside.
- In another bowl, whisk milk and eggs. Pour over flour mixture and whisk lightly to combine. Whisk in the melted butter.
- Following the manufacturer’s instructions, cook waffles until golden brown and crisp. Serve warm, topped with Alexis de Portneuf Belle Crème slices, raspberries and jam.
