La Raclette de Portneuf
This firm surface ripened cheese with a washed rind has a delicate taste that is both fruity and lactic with a butter and almond aroma. It is well balanced between salty and acidulous.
Ingredients
- 2 slices Raclette cheese
- 2 slices rye bread
- 2 tbsp oil
- 3 slices red onion
- Pinch of salt
- Butter
- Pinch of ground cumin and caraway seeds
THE EXTRAS
- White ham
- Sliced pickles
- Cooked chicken
Directions
- Pour oil into a skillet and allow it to warm for one minute over medium-high heat. Add the onions, sprinkle with a dash of salt and cook, stirring often, until they turn dark caramel brown, about 15 minutes. Add a little water to the skillet if the onions stick to the bottom. Set aside.
- Butter the outside of the bread slices.
- Mix the caramelized onions with the cumin and caraway seeds, spread the mix on the inside of the bread slices and top with the cheese. Add the extras, if desired, to one of the slices.
- Close the sandwich.
- Place the sandwich inside the panini press for 4 minutes or in a skillet over medium-low heat.
