- Olive Oil, to taste
- 4 eggs
- 50 g (2 oz) pepper or fine herbs Capriny goat cheese, crumbled
In a non stick frying pan, heat the oil at medium heat. Pour the eggs and lower the heat.
Keep stirring with a spoon.
Add the cheese and keep on stirring while it cooks.
Stop when the eggs have achieved the desired consistency.
Serve straight away, with toasts.
