La Sauvagine
La Sauvagine is a cow milk cheese with a moist and supple rind that ripens from the outside in; runny ivory body; fresh butter taste with a hint of mushrooms; melts in the mouth and is flavourful; culminating with a rustic taste.

Ingredients
- 30 ml (2 tbsp) honey
- 2 ml (1/2 tsp) red pepper flakes
- 2 large slices of thick, rustic bread
- 125 g of Alexis de Portneuf La Sauvagine Cheese
- 1 pear, cored and sliced
- 4 thin slices of prosciutto
- Coarsely chopped toasted almonds
- Fresh basil leaves (optional)
Directions
- Set the oven rack to the middle position and turn the broiler on.
- In a small bowl, warm up the honey for a few seconds in the microwave, then stir in the red pepper flakes. Set aside while you prepare the toasts.
- Toast the slices of bread. Set the toasted bread on a baking sheet lined with aluminum foil.
- Slice the Alexis de Portneuf La Sauvagine Cheese and distribute over the toasted bread, then top with sliced pears. Cover with prosciutto. Broil for 3 to 5 minutes, just until the cheese melts and the prosciutto colors in spots.
- Transfer the toasts to serving plates. Garnish each serving with a drizzle of spicy honey, a sprinkle of chopped almonds, and some fresh basil leaves. Serve right away.
