- Butter, to taste
- 2 zucchinis cut lengthwise, then minced
- 1 litre (4 cups) rice
- 125 ml (1/2 cup) 35% cooking cream
- 1 Lady Laurier cheese (150g/5oz)
- Chives, chiseled, to taste
- Salt and pepper
For the rice:
In a large pot, cook rice until tender. Follow the instruction on the packaging.
In a frying pan, melt the butter over medium heat. Add the zucchini.
Season and cook for another 3-4 minutes.
Add the rice and the cooking cream and warm up for 3-4 minutes.
Add half of the Lady Laurier cheese and stir until the cheese is melted. Check the seasoning and adjust to desired taste.
Serve right away and garnish with the remaining cheese and chives.
