Cantonnier
Cantonnier is a firm cheese, uncooked and surface ripened with a washed rind. It distinguishes itself with its effervescent flavour, reminiscent of fruity cream and fresh apples.

Ingredients
- 2 slices Cantonnier cheese
- 2 slices multigrain bread
- Butter
- Mayonnaise
- 2 slices of turkey
- 3 slices of pear
THE EXTRAS
- Dried cranberries
- Blanched almonds
Directions
- Butter the outside of the bread slices.
- Spread mayonnaise on the inside of the bread slices and top with the cheese.
- Add the turkey, the pear, and the extras if desired, to one of the slices.
- Close the sandwich.
- Place the sandwich inside the panini press for 4 minutes or in a skillet over medium-low heat for 4 minutes on each side or until the cheese starts to melt.
